This is a authentic chanpatna food. Prepared maximum in south karnataka. Its easy and it can be prepared with homely items . Very crunchy and spicy and a perfect side dish and a perfect evening snack. From kids to all age people will love this snack

Ingredients of Maddur vada

1.00 cup Mida
3.00 tbsp Rice Flour
2.00 tbsp Chiroti Rava
2.00 tbsp salt
0.50 liter oil
0.50 cup Water

Maddur vada

Take two medium sized onions wash it thoroughly, and then keep it in water for few minutes to avoid tears in your eyes. Now chop/cut the onion carefully into small pieces and set it aside in a bowl. Do not chop/cut into big pieces which will be somewhat to eat. Onion is the main ingredient for maddur vada.

Now take a oil paper or a butter paper and make the dough into small pieces and spread them on the oil paper into circular shapes. See this step is important the vada should not be tapped into to thin size, it should be tapped to medium thickness because there are chances of vada breaking down with thin thickness. Then sprinkle the Chiroti rava on the tapped vada on the top side.

Now take a oil paper or a butter paper and make the dough into small pieces and spread them on the oil paper into circular shapes. See this step is important the vada should not be tapped into to thin size, it should be tapped to medium thickness because there are chances of vada breaking down with thin thickness. Then sprinkle the Chiroti rava on the tapped vada on the top side.

Now put oil to the pan and keep it in high flame and heat the oil, once the oil heats put it into medium flame. Don’t heat the oil too much once it’s already high heated because the oil turns black.

Now slowly add the vada tapped on oil paper to the oil, ensure you be careful because oil is heated, now let it fry well in deep oil because there are chances of vada splitting because there is onion. Don’t tear the vada while you putting, because the oil will get dirty. Now in a medium flame fry it upto golden brown color.
