STEP : 1
Luchi is first choice of every Bengali foodie. This is very traditional and authentic Bengali dish. Its a very special side dish in any Bengali household. In Durga-puja or any Bengali occasion like bie , annaprashan , poite we must make this luchi.

STEP : 2
For Bengalis luchi is not only a dish but it is an emotion. Luchi. Luchi is deep fried in desi ghee. But now a days peoples are health conscious so we can use refine oil instead of desi ghee. Or we can mix refine oil in desi ghee.

STEP : 3
Now lets start luchi, much loved Bengali bread. At first we take half kg of maida / flour. We take this half kg maida for two or three persons. You can increase the quantity according to the numbers of the persons.

Take the maida in a broad plate. Now add 1 or 2 pinch salt or as per your choice, in this maida and mix it properly. After that add 2 tbsp. of desi ghee in the maida. And mix both properly and tightly .

STEP : 5
We use ghee in maida to make it softer and this process is called Moyen. By this we get soft luchis. After that take half cup of lukewarm water and pour slowly in this maida and make a soft smooth dough.

STEP : 6
Now keep the dough rest in some time before making the luchis. Now make small ball from the dough. Cover the balls with a moist kitchen napkin. Apply some oil or ghee on the balls. Roll each balls into a circle of about 3to 4 inchs.

STEP : 7
Now turn to fry them Take a deep kadhai and pour some ghee or refine oil as you wish for fry. let it be heated. Now slightly drop the dough circles in the ghee. The luchi began to puff up.

STEP : 8
Turn the another side of luchi to cook. Take care the gas flame should be in medium. Now drain out the luchi from the kadhai in a napkin to soak extra oil from it. Serve hot with your favorite vegetable or gravy dish.
