Ingredients of Lemon Pickle
STEP : 1
Dry roast the red chilies, half tablespoon mustard and methi. Add turmeric and asafoetida and grind into a fine powder as shown. Keep the pickle powder aside fro later use.

Dry roast the Rock Salt till it becomes crispy crystals. This might take about 5 minutes.Remove and keep aside till later.

Wash the lemons well. Then dip them in boiling water for a minute. Remove and dry. After this cut them into quarters.

Wash the ginger and green chilies thoroughly. Pad dry using a clean cloth. After this chop into fine pieces. as shown.

Heat the oil in a pan. Add the remaining mustard. When the mustard splutters add the chopped ginger and green chilies. Keep frying on a low flame until you get a pleasant aroma.
STEP : 6
Add sugar to the pan and continue to fry on a low flame. The sugar will melt and turn into a syrup. Now turn off the flame.
STEP : 7
Add the roasted salt, pickle powder and the lemon pieces to the pan. Mix thoroughly until all the lemon pieces are well coated.
STEP : 8
After mixing fill the pickle into an air tight jar. Store like this for about 15 days. The pickle is then ready to be enjoyed.
