Vegetable kuzhi paniyaram is the traditional and healthy breakfast as well as best evening time snacks in South Indian Dishes,the main Ingredient of this Kuzhi Paniyaram is that the Idly Batter,you can also use leftover idly batter which was prepared for morning breakfast.

Ingredients of For flour preparation

2.00 cup Rice
1.00 cup Urad Dhal
0.25 tbsp Fenugreek
1.00 tbsp Salt
0.25 tbsp Baking Soda

Ingredients of For veg masala preparation

3.00 tbsp Oil
0.25 tbsp Mustard seeds
5.00 no Green Chilies
0.50 cup Onion Slices
3.00 no Curry Leaves
0.25 cup Capsicum
0.50 cup Carrot
0.50 cup French Beans
0.25 cup Green Peas
1.00 tbsp Salt
0.50 tbsp Garam masala
0.50 cup Grated Coconut
0.25 cup Coriander Leaves

For Batter Preparation

Wash and soak the 2 cups of idly rice and 1/2 a cups of urad dhal and 1/4 tbsp of methi seeds in plain water for at least three hours.

Add the soaked ingredients into the mixer jar and grind it as fine paste which is prepare for idly or dosa batter,and keep it without disturbing it for four hours.

After four hours it gets its sour taste,transfer the batter to a large mixing bowl then add the needed salt and a pinch of baking soda which is soluble in water,then add them to the batter and stir well.

For Veg Masala Preparation

Then fine chop all the given vegetables such as capsicum,carrot,french beans,grate the coconut and fine chop the green chilies and coriander leaves.

Heat a frying pan add some oil and add some mustard seeds for plotters then add the chopped green chilies,onion slices and pinch of chopped curry leaves,then saute well.

Then add needed salt and pinch of garam masala powder for mild spice,be aware about already salt is added for the rice batter.

When the vegetables are get well cooked now add the grated coconut with them and stir well for few seconds and also add the coriander leaves and remove from flame.

When the vegetable mixture cools little,transfer the saute vegetables to the rice batter bowl and stir well till all the vegetables are well mixed to the batter.

Heat the kuzhi paniyaram mold pan add some oil and pour 1 and 1/2 tbsp of vegetable mixed batter on to the paniyaram mold.

After few seconds turn on another side using a paniyaram stick or using fork spoon and again bring them to boil for both sides.

Best for evening snacks Also would be liked much by kids, since finally it comes colourful. Thanks for sharing this recipe. Especially in chettinadu cooking, it will be present. Sometimes, when left over batter exists, this could be prepared.

These are also called Paddu , Guliyappa , Yeriyappa, Gundpongluin in Kannada.  Gunta ponganalu in telgu . Appadadde in Marathi. There are many versions of these round, fluffy and crispy rice balls. But the one I like the most is from the Chettinad region of Tamil Nadu, which is generally synonymous with spicy food and a complex blend of flavours. Paddu is easy to make, provided you have a paddu maker. It's an Indian dish made by steaming batter using a mould. The batter is made of black lentils and rice. Paddu makes a quick, healthy, light lunch or snack box. This is a favorite of both kids and adults equally. Extremely soft and fluffy Guliyappa with crunchy outer is a scrumptious tiffin / breakfast for the kids and family. Tastes well when served hot with chutney or sambar. This delicacies can be made sweet or spicy. The sweet version is made with jaggery. In the spicy version, sauted onions and green chillies are mixed up with the batter. We can enrich that batter with grated coconut, carrot along with spicy tempering. The batter prepared for Guliyappa is the same as that for Idly & Dosa. So it can be prepared easily from left-over idly or dosa batter too. Mostly once a week, I make Gunta  ponganalu for kids Lunch Box or for evening tiffin. I always reserve 2 cups of idli/dosa batter just to make yummy paddu. With left over Idli/Dosa batter, this is a very quick and easy to make tiffin. We can use the same prepared batter and add a tablespoon of semolina and drop dollop of batter in hot oil and deep fry to get yummy punugulu. The conventional way of making Yeriyappa is by making a fresh batter. We need to soak parboiled rice, raw rice and dal & Fenugreek seeds for 2 hours and grind it to smooth batter. Then add salt and ferment the batter overnight. With the fermented batter, you can follow the rest of this recipe procedure to make yummy and tasty Yeriyappa. Appadadde when served hot with shallot garlic chutney is a treat to our taste buds. We can also serve with coconut chutney, tomato chutney, idli podi or with  sambar. Go ahead and try this quick & easy Gunta ponganalu recipe at your home & enjoy.
