For Batter Preparation

STEP : 1
Wash and soak the 2 cups of idly rice and 1/2 a cups of urad dhal and 1/4 tbsp of methi seeds in plain water for at least three hours.

STEP : 2
Add the soaked ingredients into the mixer jar and grind it as fine paste which is prepare for idly or dosa batter,and keep it without disturbing it for four hours.

STEP : 3
After four hours it gets its sour taste,transfer the batter to a large mixing bowl then add the needed salt and a pinch of baking soda which is soluble in water,then add them to the batter and stir well.
For Veg Masala Preparation

STEP : 1
Then fine chop all the given vegetables such as capsicum,carrot,french beans,grate the coconut and fine chop the green chilies and coriander leaves.

STEP : 2
Heat a frying pan add some oil and add some mustard seeds for plotters then add the chopped green chilies,onion slices and pinch of chopped curry leaves,then saute well.

STEP : 3
when the onion gets transparent then add the fine chopped vegetables such as capsicum,carrot,and french beans slices and green peas with them stir well for few seconds.

Then add needed salt and pinch of garam masala powder for mild spice,be aware about already salt is added for the rice batter.

STEP : 5
When the vegetables are get well cooked now add the grated coconut with them and stir well for few seconds and also add the coriander leaves and remove from flame.
Preparation for Paniyaaram

STEP : 1
When the vegetable mixture cools little,transfer the saute vegetables to the rice batter bowl and stir well till all the vegetables are well mixed to the batter.

STEP : 2
Heat the kuzhi paniyaram mold pan add some oil and pour 1 and 1/2 tbsp of vegetable mixed batter on to the paniyaram mold.

STEP : 3
Repeat the process for all the fill all mold and close the lid for few minutes and bring it boil in medium flame.

STEP : 4
After few seconds turn on another side using a paniyaram stick or using fork spoon and again bring them to boil for both sides.

STEP : 5
When both the sides it gets boiled,now the hot and tasty vegetable kuzhi paniyaram is ready to serve hot with any type of chutneys or with sauce.
