The flavor and taste of the crepe depends on the proportions used. Unlike dosa, this crepe does not go through fermentation process and is much thicker than a normal dosa." In the ‘Silappatikaram’ which is believed to be the earliest epic in the Tamil language written over two thousand years ago. The author describes street vendors at beaches selling crispy mixed dals to passers-by. The main ingredients of this Protein Rich crepe are the protein-packed toor dal and chana dal which are ground with rice and kulthi to make the batter. It is a healthy, protein rich & nutrient dense Breakfast made of mixed lentils , kulthi & spices. It is one of the most commonly eaten foods from Tamil cuisine. It tastes delicious and is mostly served with a chutney. It can be made thick or thin, soft or crisp all to suit your taste. Kulthi need to soak into the water for 6 to 7 hr. Rice are soaked for at least 2 to 3 hours. Lentils mix is soaked into water for 1hr. Then blended to a slightly coarse batter and allowed to rest for 2 to 4 hours. However crepe comes out good even without resting. The batter is not fermented but resting helps to enhance the flavor. I usually soak, blend, rest and then keep the batter in the fridge the previous night to prepare the next morning's breakfast. Sometimes I also soak them the previous night (for 8 hours), The batter is then poured over a greased tawa and spread to a slightly thick dosa. This crepe is best served hot with chutney. You can refrigerate batter and use up the left over batter in the next 2 days. Mixed lentils kulthi arsi crepe is a traditional protein-rich n nutritious dosa prepared using kulthi, rice and assorted lentils. It may be prepared crispy as liked by children with mild spices or soft for elders a bit spicy and served for breakfast.
