Ingredients of Kollu chutney
STEP : 1
In a pan slightly roast the horse gram with out addition of oil. No need to over fry just heat the horse gram.

Boil the horse gram with addition of water and little salt. You can pressure cook or boil in a pot.

After two to three whistles switch of the flame, check the grain it get cooked soft.
STEP : 4
DonŽt over cook the horse gram, check by pressing the gram in between thump and index finger.

Drain excess water from the cooked gram, use this extracted soup for further rasam preparation.

Keep the pan or kadai on flame. Then add pour some oil. When it get heated add some add œ of mustard seeds.

When mustard seed starts to splutter and pop, carefully add Urad dal and Bengal gram to that.
STEP : 8
Urad dal gets fried well in oil and turn its colour from white to golden colour. Add cumin seeds.
STEP : 9
When cumin seed stop its splutter sound and get fried in oil, then add coriander seeds.

Add sliced onion pieces and red chili pieces. Saute it well in oil, , it turn crunch and golden colour.

Add finely chopped tomato to the fried onion and red chili, saute it well for 5-10 minutes in low flame.
STEP : 12
Saute the onion and tomato well, till turn to mesh and sauce. DonŽt over fry the tomato.

Now take freshly chopped curry leaf and coriander leaves, roughly chop and add to it.

It this stage add already prepared boiled horse gram to the onion tomato mixture. Saute and then switch of the flame.

Add required amount of salt. Keep in mind salt already added for horse gram. Approximately add œ tsp of salt.

Saute and mix it well. Then cool down the mixture then add lemon size tamarind to that.

Transfer the content to the mixture grinder. Grind mixture well with addition of some water.
STEP : 18
Make it into coarse paste with addition of some water. Kolu chutney is ready to serve. If you want means temper with mustard seeds and curry leaves.
