STEP : 1
The key ingredients to prepare kancheepuram idli ,we need idli batter,curry leaves ,coriander leaves ,turmeric powder,salt,red chilli powder,ginger,urad dal,black pepper,oil,cumin seeds,baking soda and hing or asafoetida.

STEP : 2
Take a required batter combination of a cup of raw rice,two cup of parboiled rice ,two cup of urad dal and a tablespoon of fenugreek seeds and it is fermented for 6 to 8 hours or overnight,now add a pinch of salt and baking soda mix it well and keep aside.

Turn on the flame,heat a two tablespoon of oil on a vessel now add a tablespoon of urad dal and let it splutter ,you can also add tablespoon of channa dal .

Now add a tablespoon of cumin seeds and a tablespoon of chopped ginger and let it splutter for few seconds.

STEP : 5
Now add a half cup of curry leaves ,for seasoning initially you can add a spicy red mustard seeds if you prefer.

Add a 2 nos of red chillies or add green chillies ,you can add handful of cashew nuts for nice crunchy.

Add a half cup of fresh coriander leaves and saute it for few seconds ,you can add a cup of capsicum if you prefer.

Add a tablespoon of red chilli powder and a pinch of turmeric powder and saute it in a low flame.

STEP : 9
Now add a pinch of asafoetida or hing powder for a taste and add a tablespoon of crushed black pepper.

Now add a salt as per a taste and mix it well for few seconds,check and add a salt already salt added in a idli batter.

Turn off the flame let the mixture cool down for few seconds and pour the mixture into a batter and mix it well.

If we add the mixture in hot the fermentation of idli batter will not be good and mix it completely like this.

Turn on the flame and heat water in the idli cooker for five minutes and place a soft cotton cloth on a idli plate.

STEP : 14
Pour the batter in each molds and cover it for 5 to 8 minutes ,afterthat check it using knife when it cooks completely the knife will clear down.

Now our traditional kancheepuram idli is ready now ,transfer them in a seperate plate ,you can have these with the combination of kara chutney,coconut chutney ,all spicy chutneys and sambars.
