Ingredients of Kambu koozh
STEP : 1
take a cup of kambu or pearl millets in a mixer jar and grind until it becomes as a nice powder.

then put this powder in a pan and add water and mix well so that there should be no lumps and its shouls become a thin paste
STEP : 3
then switch on the stove and keep in medium flame. then keep stirring it until you find the mixture is cooked. don't leave it without stirring then the flour will get burnt.

the cooked porridge looks like the one as shown in picture. you can even taste a little to ensure that you do not get the raw taste of the flour.

then take some cooked rice in a mixer jar and add water it and grind it to a little watery paste.

now add both the cooked pearl millet porridge and cooked rice paste to a little bigger steel vessel or a mud pot and mix them well. add a little water if needed to loosen them. let it ferment overnight (8-10 hours). from step 7, we will see the items to be done in the morning and added to this fermented mixture.

now add a cup of finely chopped onions and also a tablespoon of salt (as per taste) to this fremented drink and mix it, so that the onion pieces are separate. this will make it more interesting when you drink as you get crunchier onions in your mouth

now in a mixer jar, add 1 green chilli, small piece of ginger and a tablespoon of jeera. on top of this add 1/4 cup of curd and grind them well
STEP : 9
add this spicy buttermilk or curd mixture to the fermented porridge and bring it to drinking consistency,, this spicy buttermilk is the taste enhancer here and is very important to add before you drink.
STEP : 10
now pour it to a glass and can drink it all by yourself. no need for any specific side dish as there are onions already added to it, but if you wish you can take something spicy like pickle or so. try and enjoy this healthy drink.
