Ingredients of Jhinge posto
STEP : 1
Jhinge means ridge gourd. Today I am going to share here a delicious curry made by Jhinge or ridge gourd and poppy seeds or posto. It is a dry dish very tasty and easy to prepare dish. It is very healthy too.
STEP : 2
Take approx 4 jhinge or ridge gourds wash them properly. Now peel the skin cleanly. Cut it length wise and chopped it into small cubes. Jhinge or ridge gourd is a very healthy vegetable in summer seasons.
STEP : 3
It has a natural taste. It absorb all the masalas in it and give a very good flavour of the dish. Here it give a very good taste of posto or poppy seeds paste. We can make other dishes with this vegetable too.
STEP : 4
Now take 2 medium sized onions. Cut them as finely sliced. Take approx 3 tbsp of poppy seeds add 1 cup of water in it and let them soak into the water. After few mins drain out the water from the seeds.

Take a mixture jar. Add the poppy seeds and 3 green chilly in it. If you want you can add more and less chilly as per your taste. But it is basically a spicy dish. Grind it in coffee jar. Make a smooth paste.

Take a kadai .Add 3 tbsp of mustard oil in it. Add kalaunji or mangrail in it and 1 red dry chilly in it. Let them sizzle for few seconds. Add the finely sliced onions in it. Let it fry till it gets light brown colour.
STEP : 7
Now add cubed jhinge or ridge gourd in onion. Mix them properly. Now add the poppy seed paste in it. Coated the paste in the jhinge and onion. Add salt and 1/2 tsp sugar in it. Add 1/2 cup water in it. let it dry add 1 tbsp of mustard oil in it. Serve it hot with rice.
