STEP : 1
Take all the vegetables like potatoes, beans, peas, capsicum. Wash and cut into big pieces. Place it on a steamer pan.

Place the plates on the steamer. Use the steamer instead of cooker to minimise the use of water. Boil them well.

Mean while, take a pan add few tbsp of water, add the greens like palak, mint etc. Boil it well on medium flame.

Maintain the flame till it becomes soft and blenched. After it is over, drain off the full water in a perforated spoon and keep aside.

In a mixer , take three chills and put coriander in it. Add the greens in to it after cooling completely.

After the vegetables have boil, cool them well and add to the mixer. Do not add potatoes. Do not add water.

Now grind all the above well in a coarse consistency. Do not use water to grind. Maintain the stuff as dry as possible.

After the potatoes have boil, take them and peel them in a mixing bowl. Squeeze half of lemon juice in it.

Now smash the potatoes with half in a coarse way. Add the green paste carefully. Be sure not to make the mixture watery.

Mix the both very well. Blend it with hand. If too dry add little paste. If very moist add potatoes. Add one tbsp corn flour.

Mix this well and check the consistency. If well and dry, add salt and turmeric powder to it. Mix again very well.

To this, you can add any dry nuts like cashews, almonds or walnuts. Here I have added cashew alone. Keep little for garnishing.

After mixing all, make the stuff into small balls of lemon sized. Place it on a plate and keep aside. Put bread crumps in a plate

Make a balls little flat and roll it in the bread crumps. If necessary add a cashew on a top.keep aside.

Heat a pan and add oil. If water you can also deep fry it. After oil is heated place the cutlets.

Roast it on one side for 3 to 4 mins. Later turn it to roast on other side. Make it golden brown

After the two sides are well roasted, keep it on a plate and serve hot. Serve it with tomato sauce. Garnish with dry nuts.
