Ingredients of Garlic rice
STEP : 1
The key ingredients to prepare Chilli garlic rice ,we need rice ,garlic cloves,onions, Potatoes,carrot,beans,tomatoes,green chillies,red chillies,ghee,ginger ,lemon,bay leaf,coriander leaves,,cinnamons,cardamoms,red chilly powder,garam masala powder,turmeric powder, sambar powder,oil and salt.

Take two cups of rice or basmathi rice in a seperate bowl to soak it.

Add a cup of water along with the rice and soak it under 15 to 20 minutes
STEP : 4
Wash the four medium size potatoes and peel the potato skin ,cut into small pieces .
STEP : 5
Wash a single carrot and peel the carrot skin then cut into small pieces .

Add a cup of small pieces of green beans or French beans along with the vegetables.

Add a cup of water along with the vegetables and keep it aside for few minutes.

To make chilli garlic paste ,add half cup of garlic cloves in a blender jar.

Add 5 to 6 nos of green chillies in a blender for adding more spices.

Add 6 to 7 nos of red chillies in a blender for adding more spices.

Blend them all in a semi coarse paste and add it in a seperate bowl.

To make masala puree ,add 8 to 10 nos of shallot onions in a blender.

Add few fresh coriander leaves or cilantro along with the onions in a blender jar.

Add a tablespoon of black pepper corns for more spices in a blender or mixie jar.

Add a broken cinnamon stick along with the spicy ingredients in a blender or mixie jar.

Add two nos of lavang and two nos of green cardamoms in a blender jar.

Add small pieces of ginger along with the spicy ingredients in a blender or mixie.

Blend all those ingredients once into a fine paste and make it seperate the paste.

For tampering turn on the flame,place a pressure cooker ,add half cup of cooking oil.

Add a tablespoon of ghee and let it melt along with the cooking oil and let it heat.

Add a single bay leaf or biryani leaf in hot oil and let it splatter.

Add a tablespoon of urad dal or ulundhu and let it fry for few seconds.

Add few curry leaves in a hot oil and let it splutter for few seconds.

Add a pinch of hing or asafoetida and let it cook in a hot oil.

Add a cup of shallot onions and saute all these and let it cook for few minutes.

Add semi grounded chilli garlic paste and mix it completely,let the raw smell goes away.

Add a cup of finely chopped tomatoes and saute the mixture very well untill the tomatoes are nicely boiled.

Now add the mixed vegetables and mix it completely,let them cook for 2 to 3 minutes.

Add the blended masala puree and mix it completely ,let it cook for few seconds.

Add a tablespoon of salt or as per your taste and mix it well thoroughly.

Add half tablespoon of turmeric powder for a taste along with the cooking mixture .

Add a single tablespoon of red chilli powder along with the cooking mixture in a medium flame.

Add a tablespoon of garam masala powder for more spices along with the cooking mixture .

Add a tablespoon of sambar powder for more flavour along with the cooking mixture and mix it well.

Squeeze half portion of lemon juice or few drops of lemon juice in a gravy.

After mixing it ,add the soaked and drained rice and mix it well with gravy.

According to measurement,add water into the mixture and mix it completely ,let it boil for few seconds.

When everything is complete, let the mixture boil for few seconds and check the taste of salt.

When it lightly cooks,Close the pressure cooker lid and leave it for two whistles in medium flame.

After two whistles ,turn off the flame,when the pressure comes down ,slowly open the lid then transfer it in a serving bowl.Our spicy chilli garlic rice is ready.
