STEP : 1
While peeling the arbi, apply some oil to your fingers and peel. Peel the arbi and cut them in stripes. Wash them well in water and drain the water out.
STEP : 2
Heat the pan at medium heat, add oil, when heat the oil then add the arbi and shallow fried the arbi, when the arbi fry brown then take out of oil.

Heat the oil and add the cumin seeds, onion, garlic, ginger, green chilies, tomato, salt , turmeric powder, garam masala, and mix it all and cook them. atleast 5 minutes cook.
STEP : 4
Add some water and add arbi. Now cover the pan and cook arbi 3-4 minutes or till they are almost cooked. When arbi are almost done you want so you add amchur powder.
STEP : 5
arbi become crispy arbi switch off the heat and sukhi arbi sabzi is ready to serve. and decorate some cream. i like to serve sukhi arbi sabzi with masala roti.
