This is one of the simple curry which can be done with only one vegetable and it is the melongene and also a very tasty ingredient and requires less time to prepare this curry in a tasty way with some of the spicy ingredients.

Ingredients of Eggplant sabji

1.00 cup Melongene
0.25 cup salt
1.00 liter water
4.00 tbsp oil
0.25 tbsp cumin
0.25 tbsp mustard seeds
0.25 tbsp turmeric powder
0.25 tbsp dry coconut powder
0.25 tbsp cinnamon powder
0.50 tbsp red chili powder
