Ingredients of Eggplant sabji
STEP : 1
Bring the fresh melongene of 1 cup and kept aside which is used for making of this curry in a tasty way in less time.

Take a bowl add fresh water of 4 cups to it and kept aside for further preparation process to do easily.

Add salt of 1/2 table spoon to it and mix well until the salt dissolves in it in order to clean vegetables.

Now add the 1 cup of the fresh melongene to the water and clean them well in the salt water for 5 minutes.

Now take them out and keep those cleaned melongene on a cloth in order to dry them well before cut them to pieces.

Take the cutter and remove the nods of each and every melongene with this cutter only gently and carefully while doing this.

After that take another bowl add some fresh water to it which are fresh one and kept aside for preparation process.

After removing of all the nods from it cut them to fine pieces of required size with the cutter only gently.

Now in the bowl add the salt of 1/2 table spoon to it and mix well until it dissolves in the water for some time.

After the salt gets dissolved add those pieces of melongene to the salt water in order the pieces left fresh until the preparation.

Take a pan add oil of 4 table spoons to it and made the oil to heat in a low flame for some time.

After the oil gets heated add the cumin of 1/2 table spoon to it and made them fry in the oil for some time.

After that add the mustard seeds of 1/2 table spoon to it and made them fry in the oil in a low flame.

After they are fried add those melongene pieces without water to the oil and mix well with the oil in a low flame.

After that add the turmeric powder of 1/2 table spoon to it and mix well with all the pieces in the bowl in low flame.

After that add the salt of 1/2 table spoon to the pieces and mix well until the salt applies to all the melongene pieces.

Now mix well and close this with a lid for 5 minutes to cook the pieces in a low flame only.

After the time open the lid and add the dry coconut powder of 1/2 table spoon to the cooked pieces and mix well.

Now add the red chili powder of 1/2 table spoon to the pieces and mix well in the bowl in a low flame.

Before put off the stove add some pinch of garam masala and mix well then take them to the serving bowl.
