Ingredients of Eggplant curry
STEP : 1
The first step is to wash the aubergine and cut them into long pieces and take into a bowl.

Now take one onion and three green chillies into a grinding jar and grind it into fine paste

Now a deep bottomed pan and add about one cup of oil and heat it.
STEP : 4
Now add the chopped aubergine and fry them for about two minutes till it becomes soft.

Now take another pan and add about three tablespoon of oil and let it heat.

Now add the grinding onion and green chilli paste and fry it for about two minutes.
STEP : 7
Now add the fried aubergine and mix it well and add red chilli powder and salt.

Now mix it well and add about half a cup of milk and allow it to cook for a minute.
STEP : 9
Now add about half tablespoon of garam masala and cook it till a thick gravy is formed.

Now transfer it to a serving bowl and garnish it with curry leaves and serve it hot.
