Ingredients of Egg puff
STEP : 1
The key ingredience to prepare egg puffs,we required maida,onion,coriander leaves,beaten egg,garam masala,red chilli powder,coriander powder,ghee,milk,oil,turmaric powder,chrunched ginger,sliced egg,salt and sugar.

Take a separate vessel add one and half cup of all purpose flour and sieve or sift the maida thoroughly.

Now add a tablespoon of sugar and a pinch of salt and mix it well,you can use unsalted butter into small chunks for smooth dough.

Now add lightly beaten egg into plain flour and rub it with hands,you can also add 1/4 cup of cooled water to prepare a dough.

To make a dough smooth add half cup of milk or else you can add water if needed.

Now add two tablespoon of ghee or unsalted butter and make a smooth dough,always use a butter at temperature.

Now smooth dough is ready and let it rest for 15 to 20 minutes in the refridgerator.

To prepare egg stuffing masala turn on the flame,place a vessel add two tablespoon of oil into it.

Now add a cup of chopped onions or sliced onions into oil and saute in low flame under 2 to 3 minutes.

Now add a tablespoon of crunched ginger into the mixture or else you can add a combination of ginger garlic paste.

Now add half cupof coriander leaves and mix it well.Now mix all this ingredients,you can also add a pinch of fennel seeds for seasoning.

Now add a tablespoon of red chilli powder and fry it lightly,untill the raw smell leaves off.

Now add half tablespoon of garam masala or else you can add egg curry masala into the mixture for good aroma and taste.

Now add half tablespoon of coriander powder, you can also add a crunched black pepper into the mixture.

Now add a pinch of turmaric powder and mix all this ingredience in low flame because of less quantity.

Now add pinch of salt and mix it after a second ,switch off the stove and let it cool down for few minutes.

Lightly dust the flour into the working surface,now roll the dough in a large circle and spread a tablespoon of ghee all over the area and roll it gently.

Now cut the roll into small pieces and make it a small balls ,now gently roll the small balls into rectangular shape and place it as plus shape.

Now take cooled mixture,add a tablespoon of mixture in centre of rectangular roll,don't stuff too much of masala's on top of the roll because while cooking the masala's will come out.

Now place the sliced egg on down portion on top of the mixture and gently press it.

Now cover all the four edges over the egg and gently press it at the ends,so that it will not get open while cooking.

Place a presser cooker on low flame add two tablespoon of ghee and one tablespoon of oil before cooking the egg puff brush with beaten eggs on top of the egg puff to get nice colour.

Now place a egg puffs in cooker and close the lid without putting weight on it leave it under six to seven minutes.

Now flip the puff and leave it for 5 to 6 minutes,now check the egg puff is well cooked on all sides and take out gently and separate it on serving plate,Now our egg puff is ready to serve with the combination of ketchup or tomato sauce.
