STEP : 1
In the first step clean the Brinjal well and then brush oil on it , then heat a non stick pan and pour little oil to it then keep these brinjal's on it and close the pan ,let all the water inside it gets out. keep in low flame.

When the shape and color of brinjal gets changed that is when its nicely fried outside ,off the flame and keep it to cool.Then peel off the skin and take out the flesh out and keep it aside.

Mean while heat another pan or kadai and pour oil to it ,when its hot add shallot, green chilly and tomato to it and stir well.

when all these things gets saute well add ladies finger to it , it can be cut in to small pieces .

when its nicely mixed well and when the ladies finger is half cooked add turmeric powder and chilly powder to it.

Mix it well and stir for two minutes , when the smell of the turmeric powder and chilly powder change to a roasted state.

Then add the brinjal ,that we had kept aside and add salt also to it, mean while make coconut milk also.

Then mix everything well and close the pan or kadai for two to three minutes and then add the coconut milk to it(we need the first milk from coconut).

Mix everything well and let it get cooked and mixed for two minutes , keep in low flame and close the kadai.
STEP : 10
When our vegetable koottu curry is cooked well, off the flame and stir it well, then serve hot along with rice or chapatti.
