STEP : 1
Add 4 glasses of water to a vessel and put the eggs and potato and boil well for 20 minutes on medium flame. Once the eggs and potato are boiled, remove from gas, allow to cool, remove the shells and put slight cuts on the eggs so that the masala is absorbed by the eggs. Peel the potato and cut into medium cubes.

Cut the green chilies, ginger, garlic, coriander leaves, curry leaves and keep aside. Also keep aside the cloves, cinnamon stick, mustard seeds.

Cut the Onions and Tomatoes into small pieces as mentioned in the above ingredient list and keep it ready to fry.
STEP : 4
Heat a non-stick pan, add little oil, add mustard seeds, green chilly, curry leaves, ginger, garlic, cloves and cinnamon stick and fry for 2 minutes. Now add onion and fry till golden brown.

Now add tomatoes and fry well. Once the tomatoes are nicely cooked and smashed, add chilly powder, turmeric powder and salt and mix well. Add little water and adjust the consistency.

Now add the boiled eggs and potato and mix well. Make sure the eggs are nicely coated with the masala so that the masala is absorbed into the eggs. Check the taste and adjust the salt accordingly and turn off the gas.
STEP : 7
Pour the egg masala into a bowl and garnish with coriander leaves and curry leaves. The Spicy Egg Chilly Masala is ready to be served with rice, chapati or dosa.
