This is a white curry we use many items which is rich in protein and minerals . This is little sweet and spicy curry as we use ingredients like that , we can have this as a side dish with breakfast . Or you can have it as a soup like also .

Ingredients of Egg kurma

5.00 no egg
1.00 cup beans
1.00 cup carrot
2.00 cup coconutmilk
0.25 tbsp salt
3.00 no green chilly
6.00 no pepper
1.00 cup potato
3.00 no dried red chilli
1.00 no onion
0.50 tbsp ginger
0.50 tbsp garlic
3.00 no cinnamon
2.00 tbsp coconut oil
2.00 tbsp coriander leaves

At first take five eggs and keep it cook along with water and little salt ,let it boil and cook well .

Mean while we can chop the vegetables , chop potato ,carrot and beans in to small pieces and keep it aside .

Then heat a pan and put oil to it when it is hot add chopped onion, ginger ,garlic ,green chillies ,dry red chilly

Saute it well and then add the chopped vegetables , some garam masala powder cinnamon and pepper to it .

Mix everything well and let it cook for sometime ,close the pan and keep in low flame , meanwhile make coconut milk .

In meantime check our eggs also , when it is done keep it to cool and then remove the shell and cut it to two equal halves .

Then check the vegetables and when it is half cooked add the second coconut milk to it and mix it well .

Close the pan again and keep in low flame , add salt as needed , in every two minutes stir it .

Eggs are rich in proteins. It's very healthy and pairs very well with any biriyani, also u can serve this kurma with dosa, rice pulao, paratha or even with chappati. Whenever I have guests for a meal, I prefer to make this to go with any kind of chicken biriyani or veg biriyani. Since it is a quick recipe if we have boiled eggs ready.
