STEP : 1
The first step is to cut the okra into one inch pieces and boil two eggs for about fifteen minutes . Now take a pan and add about four tablespoons of oil.

Once the oil gets heated add chopped onion to it and fry it for a minute and now add chopped green chillies to it.

Cook the onions for about 3 minutes until the onions turn to golden brown in colour. Add curry leaves and fry them.

Now add the okra pieces to it and mix it well and leave for about a minute. Again mix it well and cook for about a minute.

Once the okra becomes soft add the red chilli powder to it and mix it well and cook for about a minute.

Now add about one cup of water and bring it to boil. Now add boiled eggs and add about one tablespoon of salt.

Also add one tablespoon of jaggery and one tablespoon of tamarind to it and cook it on a low flame by closing the lid.

Now cook till the masala gets into okra and all the water gets evaporated. Once the okra becomes soft. Put off the flame.

Now okra egg sweet curry is ready to serve. Garnish it with coriander leaves and serve it hot. It goes well with hot steamed rice topped with ghee.
