Drumstick leaves also known as murungai keerai in tamil is very good for health. It should be included in daily diet. In this recipe, drumstick leaves are added to the gram flour with other ingredients which is made into a batter and deep fried.

4.00 tbsp Drumstick leaves
0.75 tbsp Keerai powder
1.00 no Green chilies
0.25 tbsp Coriander powder
1.00 no Onions
6.00 no Curry leaves
0.25 tbsp Baking soda

To make keerai powder - Roast 2 dried red chilli, 2 tblspn fennel seeds and 1 tblspn cumin seeds and grind into a fine powder and add to it.

Turn the pakoras and allow them to fry on both sides. Do not fully fry them but it should be half fried.

Once they are half fried, drain the oil and put them in a plate. You will get them in a golden yellow colour as shown in the picture below.

While they are still hot, flatten the pakoras using a round bottomed vessel like a glass or a small plate. This step is optional, but you will get more crispier and evenly fried pakoras

Fry them again as usual till they turn golden brown in colour. Drain oil using a kitchen towel. Serve hot with tea or with tomato sauce.
