STEP : 1
Take all the required ingredients. I have taken gram flour, green chillies, curry leaves, onions etc. Keep all the other ingredients ready.

First take a bowl. Now, add one and a half cups of gram flour. Chop the onions and add chopped onions to it.
STEP : 3
The next step is to add required green chillies and curry leaves. Chop the green chillies very finely and add to the flour.

In this step, I have added a homemade powder called keerai powder. This powder gives a nice smell and a different taste to the pakoras.

To make keerai powder - Roast 2 dried red chilli, 2 tblspn fennel seeds and 1 tblspn cumin seeds and grind into a fine powder and add to it.

Add coriander powder. Also, at this stage add required salt and a pinch of baking soda and mix all the ingredients together.

This is the last ingredient to be added before making it into a batter. Add the washed drumstick leaves.

This step is really very important. Add water gradually while mixing the flour. Note the consistency of the batter. It should neither be very thick nor watery.

Once you get the right consistency, fry them. For frying, once oil is hot, drop a spoonful of batter in oil.

Turn the pakoras and allow them to fry on both sides. Do not fully fry them but it should be half fried.

Once they are half fried, drain the oil and put them in a plate. You will get them in a golden yellow colour as shown in the picture below.

While they are still hot, flatten the pakoras using a round bottomed vessel like a glass or a small plate. This step is optional, but you will get more crispier and evenly fried pakoras

Fry them again as usual till they turn golden brown in colour. Drain oil using a kitchen towel. Serve hot with tea or with tomato sauce.
