STEP : 1
Doi potol or dahi parwal is my favorite childhood recipe. I am a huge fan of this dish.. Its a best recipe to beat the summer heat. but I love to cook it any time of the year. this authentic and traditional dish is comes from Bengali kitchen.Bengali

STEP : 2
To make this dish at first we need potol or parwal we take 10 pices of potol for two persons. Scrape the skin of the parwals or potol, vertically as shown the picture. and cut them both sides of them.

STEP : 3
Now cut the potol or parwal horizontally half. In any Bengali dish cutting style of the vegetables are very important. We think it gives the dish a beautiful taste.Now wash the potol properly and sprinkle 2 pinch of salt in it and mix properly.

STEP : 4
Now take a deep kadhai put it in gas stove turn on the gas an let it be heated. Add 2 tbsp. of mastered oil in it let it be heated. Add the horizontally cut parwals in it, fry them still light brown colour.

STEP : 5
After it gets light brown colour , remove it from kadhai and keep aside.Now on the other we take a medium sized onion and 4 to 5 garlic cloves , by this make a smooth paste. Take 3 to 4 tbsp. of fresh yogurt.

STEP : 6
Take a bowl add yogurt, onion garlic paste, a pinch of turmeric powder, red chilly powder ans half tbsp. of sugar in it. Now whisked the whole thing properly and make a smooth paste. Make sure there should not be balls in it.

STEP : 7
Now take a kadai add 2 tbsp. of desi ghee in it let it be heated. Now add half tsp of mangrail ,one dry red chilli and 5-6 curry leaves in it let it be fry for few seconds.

Add the smooth yogurt paste in it ad fried potols in it add half cup of water sim the gas and cover it . After 5 mins turn off the cover your dish is ready, garnish it with green chilly and curry leaves and serve it with hot rice
