Ingredients of Cucumber Chutney
STEP : 1
Firstly take 2 green and fresh Cucumber, 2 3 Green Mirchi, Fresh Dhaniya Leaves, White Imali and Vegetable Oil. Wash Cucumber , mirchi and Dhaniya with clean water for 2 3 times.
STEP : 2
Now take Cucumber and knife. Wash the knife with clean water for 2 3 times. Remove the Bark of Cucumber by using knife as shown in Image 2.

Similarlly remove the Bark (upper skin) of all cucumber and wash them with clean water for 2 3 times. Put them in big plate.

Now take Scraper of steel material and wash it properly with clean water fir 2 3 times and put it in plate along with Cucumbers.
STEP : 5
Now Scrape the cucumber on Scraper with hand by giving pressure. So that scraped material of cucumber can taken out in plate.

Then collect all the scraped material of Cucumber from scraper and aggregate all material in plate.

Now take 1 tbsp Mustard, 1 tbsp Red Mirchi Powder, œ tbsp Haldi Powder, 1 tbsp Salt and Œ tbsp Asafoetida in a small plate.

Now take small bowl and wash it with water. Fill up the small bowl with water and soak White Imli into water for 5 8 minutes.
STEP : 9
Now put the small bowl (filled with soaked Imli) on gas stove at medium flame. Let it heat and boil for 5 6 minutes with occasional stirring.

After proper boiling of Imali put off the gas stove and let it be cool the Imli for 5 miutes. Meanwhile take small mixture bowl and wash it with water for 2 times.

Pour the little hot Imli with water in to the small mixture bowl and add Œ cup water in to the bowl so that Imli will be more cooled
STEP : 12
No w close the small mixture bowl with lid and grind it for 4 5 minutes with 2 3 intervals or breaks. Churn it in mixture up to it gets fine pury.

Now open the lid of mixture bowl and take out the Imli pury in fresh and new small bowl.

Now take the steel or plastic Sieve. Wash it properly with clean water for 2 3 times. Also take another small bowl and wash it with water.

Now put the washed Steel or plastic Sieve on the small bowl so that debrises can be removed out from Imli pury.

Now slowly pour the mixtured Imli pury into the sieve. Fill the sieve up to upper level and stir it slowly with spoon.

Now collect the sieved pury of Imli into the bowl. Remove and discard the unwanted material of Imli left out on sieve.

Now chop the fresh and green Dhaniya and green mirchi into fine size. Collect all the ingredients in plate as shown in in Image 18.

Now take the medium steel container and wash it properly with clean water for 2 3 times.

Now press the Scraped Cucumber in between both palm so that water content will be completely removed out. Take that Scraped Cucumber into the container.

Now add finely chopped and washed Dhaniya leaves in to the container. Add Œ tbsp of lemon juice in to it.
STEP : 22
Mix the whole content with proper stirring with spoon. Here Cucumber should be completely mixed with finely chopped Dhaniya leaves.

Now slowly add half of the fine pury of Imli in to mixed content in container.

Now mix the whole content properly with spoon by constant stirring for 1 - 2 minutes.

Now take another small steel Pan and wash it with water and make it dry with cloth. Take Ÿ cup Vegetable Oil. Put it on gas stove and put on the flame for 2 3 minutes at low flame.

Now after proper heating of Veg. Oil add 1 tbsp of Mustard and let it be saute for 45 seconds at low flame. Then add Œ tbsp Asafoetida and let it saute.

Now add both sauted Mustard and Asafoetida into the cucumber containing bowl. Mix the whole content properly with constant stirring with spoon.

Now add 1 tbsp Salt in to the content and stir it properly with spoon.

Now Add 1 tbsp Red Chilli Powder in to the content and mix it properly by stirring with spoon.

Now Add œ tbsp of Huldi Powder in to the content and mix it properly by stirring with spoon.

Now add Ÿ tbsp of Sugar in to the container and mix it properly by stirring for few seconds with spoon.

Now mix the whole content properly by stirring with constant stirring. Check the taste of preparation and if require then add salt, mirchi or sugar. Now the preparation is ready to serve. Serve it in serving bowl or serving dish.
