STEP : 1
The key ingredients to prepare potato wedges ,we need potatoes,all purpose flour,corn flour,vinegar,chili flakes,red chili powder,basil powder,oil for deep fry and salt .

Take a potatoes wash it out thoroughly ,peel the potatoes skin thoroughly using peeler or knife.

Take a peeled potatoes ,halve it four sides then make a small slices to prepare wedges.

Turn on the flame,place a vessel add two cups of water and add the sliced potatoes into the boiling water.

Drain it completely and transfer on a plate,don't over cook the potatoes while boiling add a little bit of salt for nice cooking.

After cooling the potatoes in a room temperature,take a separate bowl,add three tablespoon of all purpose flour in it.

Next add one and half tablespoon of corn flour or corn starch in a mixing bowl.

Now add a tablespoon of red chilly powder for spiciness,you can sprinkle half tablespoon of coriander powder if you prefered.

Add half tablespoon of basil powder into the ingredients,if you don't have basil powder add a little bit cumin seeds powder.

Add a tablespoon of red chilly flakes on it,you can also add sesame seeds if you have.

Now add two tablespoon of vinegar,if you don't have vinegar add a tablespoon of lemon juice on it.

Gradually add little bit of water and make it semi thick batter as shown in below image.

Add a salt for a taste then mix it very well for coating the better on potatoes.

Now semi thick batter is ready to prepare potato wedges.Don't add too much of water,the batter should be in a thick consistency.

Now add the half cooked potatoes into a batter and coat it all the potato slices well.

Now freeze it deeply on the refrigerator for about 20 to 30 minutes,after that take it out.

Turn on the flame place a pan,add required oil for deep frying and let it heat for some time.

Once the oil get heat up,add raw potato wedges one by one carefully into hot oil.

Now fry it deeply for few seconds till it turns golden brown color, our yummy potato wedges is ready to serve with ketchup or sauce.
