Chicken Fried Rice Preparation
For preparing the chicken fried rice I am using brown rice. This is an authentic version so I am using brown rice.
If you don’t like the taste of brown rice, you can use any white rice variety. But trust me the brown rice is very good for your health and it is very healthy for your kids too.
To get the real restaurant taste, I am using lemon grass which gives a sour taste and yes it is the most important flavour of thai chicken fried rice.
Nowadays, we are having lemon grass in most of our homes for making fresh tea. In case if you don’t have the lemon grass then skip adding it.
Am using peanuts which I am just going to add to the top of the rice after completing the preparation of the chicken fried rice.
You can skip this step if you don’t like any crunchiness in your rice. But the peanuts give a really nice taste to the rice.
I have shown this chicken fried rice recipe step by step with neat pictures so simply follow the same method with the same amount of ingredients to get the exact restaurant taste.
You can also add some egg scrambling in the rice, but I am not adding it today as I already have lots of chicken in the rice.
Pro Tips for Making Perfect Chicken Fried Rice Recipe
You must be really careful while cooking the rice. Make sure not to mash the rice by over cooking but happily the brown rice will not get mashy soon.
If you don’t have fresh basil leaves at least try using dry basil leaves powder as it gives a very nice flavour to the rice recipe.

STEP : 1
Take the chicken cubes, wash them and add salt and lemon juice, chop the onion, garlic and green chili. - Take the lemon grass and chop it, wash the basil leaves, chop the bell peppers and set aside the peanuts.

Cook one cup of brown rice in a pot using 2 cups of water as it is shown and then drain excess water and set it aside.

Heat the oil in a kadai and deep fry the onion, garlic and green chili along with the bell peppers and the chicken cubes
STEP : 4
Once the ingredients in the above step are fried well and become tender then add the lemon grass and fry it in the oil
STEP : 5
Add the basil leaves to the kadai and cook them well and mix it well with the rest of the contents
STEP : 6
Add the cooked brown rice and mix it well, add a few drops of lemon juice and salt and mix it well
STEP : 7
The rice is cooked and is ready to be served. It is then poured in the serving bowl as shown

Crush the peanuts into fine particles as shown in the image and then top on the rice and then it is ready ti be served with lemon slice and basil leaves.
