STEP : 1
Biryani is a well known dish for every one. Its nothing new. We tried, veg biryani, egg biryani, mutton biryani and chicken biryani. There are many styles to make biryani. Awadhi style, Hyderabad style, Kolkata style. Today I share the home made Bengali style chicken biryani.

I tried different types of Biryani 's but mostly what I am like is Bengali style Biryani. It has a different and familiar taste and it is very easy to cook. I make this as Bengali's are like the taste. let's cook.
STEP : 3
At first take 1/2 kg boneless chicken. Here we use medium size of boneless chicken pieces. And if you want add leg pieces you can add 4 leg pieces. Wash the chicken properly in running water. Add turmeric powder and 2 tbsp lemon juice.

Mix the chicken properly and keep aside. Now take 2 cups of Basmati rice. You can use any type of basmati rice easily available in any store. Wash the rice drain the water and add 1 tbsp of ghee in it. mix properly.

Take bowl add water. let it heat. When it started boiling add the washed rice in it. Let it boil and cooked the rice 70 percent. Drain out the water and let it cool. Keep aside. We cooked the rice 70 percent because left 30 percent will cook with the chicken.

Now take a big and deep bowl or kadhai. Add 4 tbsp. of ghee in it. Now add finely chopped onion in it. Fry the onion till it gets dark brown colour. Beware it should not be burnt. Drain out the onions from the ghee. keep aside in a bowl.

Add 2 bay leaf, dry red chilly, cardamom, cinnamon, cloves in it. Let it fry for few seconds. Now add onion paste in it fry it properly. Fry it till it gets pink colour.

Now add garlic and ginger paste in it. mix it with the fried onion paste. Add 3 tbsp of tomato paste. Add turmeric powder, coriander powder, red chilly powder in it. Add salt as per your taste.

Mix the whole ingredients properly and make a smooth masala. Now add the boneless chicken in it. Mix the chicken with the masala. fry the chicken with the masala till it started leaving ghee from the side of the bowl.

Add 2 cups of water in it. cover it and sim the gas and let it cook for 15 to 20 mins. Open the cover and let check the chicken cooked or not. Chicken should be cooked 80 percent.

Now take a bowl and add 3 tbsp. of curd and add 3 tbsp of biryani masala in it. Wiped the curd and biryani masala properly. Now add 70 percent cooked rice and the wiped masala curd in the chicken. Mix properly. Add the fried onion.
STEP : 12
Add some more salt if needed. Sprinkle some water in it sim the gas and cover it for 15 mins. After that open the cover we can see the rice and chicken are cooked properly. And there is a very good aroma and flavor spread from it. Garnish the biryani with the fried onion. serve it hot.
