Ingredients
Rice Preparation
- 3.00 cup Water
- 3.00 tbsp Oil
- 1.00 nos Star anise
- 1.00 nos Black cardamom
- 1.00 nos Cinnamon stick
- 2.00 nos Lavang
- 3.00 nos Green cardamoms
- 1.00 nos Bay leaf
- 1.00 tbsp Salt
- 2.00 cup Rice
Cashew nuts Masala Preparation
- 0.25 cup Ginger garlic paste
- 2.00 nos Tomatoes
- 0.50 cup Oil
- 1.50 cup Cashew nuts
- 3.00 cups Onions
- 1.00 tbsp Ghee
- 1.00 tbsp Cumin seeds
- 1.00 cup Green peas
- 1.00 cup Carrot
- 5.00 nos curry leaves
- 6.00 nos Green chilies
- 0.50 cup Mint leaves
- 0.50 cup Coriander leaves
- 1.00 tbsp Red chili powder
- 0.50 tbsp Garam masala
- 0.50 tbsp Salt
- 0.50 tbsp Coriander powder
- 1.00 tbsp Crunched black pepper
- 0.50 tbsp Lemon drops
Instructions
Rice Preparation
- Take a cup of rice or basmati rice in a separate bowl to soak it.
- Add a cup of water and let the rice soak under 10 to 15 minutes.
- To cook the rice,turn on the flame ,place a thick vessel and required amount of water.
- When it turns light hot ,add few drops of oil in a semi boiling water.
- Add biryani spices like Star anise and black cardamom in a hot oil and let it boil.
- Add the broken cinnamon sticks and two to three lavang or clove in a hot oil.
- Add two to three crunched green cardamoms in hot water for good smell and taste.
- Add a single bay leaf or biryani leaf in hot water and let it boil.
- Add a tablespoon of salt or as per taste and mix it for perfect taste .
- For frying turn on the flame,place a pan add half cup of oil and let it heat.
- Add 50 grams or a cup of cashew nuts or kaju in hot oil and let it fry.
- When it is roasted in a low flame after it turns golden brown transfer it.
- Add a cup of thin sliced onions and saute all these and let it cook for few minutes.
- Add the soaked rice in a boiling water and allow to boil for few minutes.
- Close the lid ,let the rice boiled for few minutes after that check the rice.
- Strain the water completely ,take away the half portion of boiled rice outside in a plate.
Cashew Nuts Masala Preparation
- The key ingredients to prepare Cashew pulao ,we need rice ,cashew nuts,green peas,garlic cloves,onions, carrot,tomatoes,green chilies,red chilies,ghee,ginger ,lemon,bay leaf, lavang,cinnamon stick,coriander leaves,mint leaves,lemons,cardamoms,red chilly powder,garam masala powder,turmeric powder, coriander powder,oil and salt.
- Take a mixie or blender jar,add few garlic cloves to make a semi coarse paste.
- Add half inch size of ginger pieces in a blender along with the garlic cloves.
- Blend it for few minutes till it becomes soft and transfer it in a bowl.
- To make tomato pure ,add two nos of tomatoes in a blender or mixie jar.
- Blend once into a fine paste and make it a thick puree then keep aside.
- For tampering turn on the flame,In a same pan ,add a tablespoon of ghee and let it melt.
- Add a tablespoon of cumin seeds or shah jeera and let it fry for few seconds.
- Add a cup of shallot onions and saute all these and let it cook for few minutes.
- Add a cup of fresh green peas and saute the mixture very well until the peas are nicely boiled.
- Add a cup of carrot pieces and saute the mixture very well until the pieces are nicely boiled.
- Add semi grounded chili garlic paste and mix it completely,let the raw smell goes away.
- Add few curry leaves along with the mixed vegetables and let it fry for seconds.
- Add half sliced green chilies around five to six for more spices and let it cook.
- Add half cup finely chopped fresh mint leaves and mix it completely for few seconds.
- Add half cup finely chopped fresh coriander leaves or cilantro and mix it completely for few seconds.
- Add the blended tomato puree and mix it completely ,let it cook for few seconds.
- Add a tablespoon of red chili powder and saute it thoroughly and let it cook few seconds.
- Add half tablespoon of garam masala or dhania powder and saute the mixture completely for few seconds.
- Cover the remaining boiled rice by adding a tablespoon of ghee ,let it heat very low flame.
- Add a tablespoon of salt or as per taste along with the curry and mix it .
- Add a tablespoon of coriander powder and mix it ,you can add a fine pieces of capsicum if you prefer.
- Add a tablespoon of crunched black pepper or grounded black pepper and mix it completely.
- Add the mixed boiled rice along with the curry mixture and mix it completely with out gap.
- Squeeze half portion of lemon juice or few drops of lemon juice in a rice.
- When the onion turns thick golden brown color ,transfer the onions in a separate plate.
- Add the finely roasted onions along with the pulao and mix it ,you can garnish it.
- Add the roasted cashew nuts along with the pulao and mix it,Our tasty Andhra kaju pulao is ready.
