Carrot chutney is better go with all breakfast recipes,carrot are have the vitamin c,carrot is the like vegetables for all our family and is to be a different recipe than any other normal chutneys,and also better to go with plain rice when it makes as thick consistency.

Ingredients of Carrot thogayal

1.00 cup Carrot
0.25 cup Coconut
0.25 cup Channa Dhal
3.00 no Red Chilly
2.00 no Green Chilly
5.00 no Garlic Pods
0.25 cup Tamarind Extract
2.00 tbsp Oil
0.25 tbsp Mustard Seeds
0.50 tbsp Salt
2.00 no Curry Leaves

Carrot thogayal

Heat a pan add 1/4 cup of channa dhaal, and add two red chilly into that and dry roast the ingredients in medium flame,(do not over burn the dhaal while fry)and keep it for cool.

when the carrot slightly fried add the coconut slices and saute slightly for few minutes,and remove it from flame and bring it cool for few minutes.

Take a mixer jar add the dry roasted ingredients of channa dhal and red chilly mixture. and grind as fine powder without adding any water to get fine paste.

Then in the same jar add the roasted vegetables ingredients into it and grind it as fine paste , at this stage add the needed salt for this chutney.

While grind the mixture add the tamarind extract water by adding gradually into that and adjust water for the consistency needed as thick are thinner.
