Ingredients of Carrot thogayal
STEP : 1
Heat a pan add 1/4 cup of channa dhaal, and add two red chilly into that and dry roast the ingredients in medium flame,(do not over burn the dhaal while fry)and keep it for cool.
STEP : 2
Heat a pan add 1 tbsp of oil, when gets hot add some garlic pods and two to three green chilies into that and saute for few minutes.
STEP : 3
Then add the chopped carrot slices into that and saute slightly,do not over cook the carrot to avoid the sweetness of the vegetable.
STEP : 4
when the carrot slightly fried add the coconut slices and saute slightly for few minutes,and remove it from flame and bring it cool for few minutes.
STEP : 5
Take a mixer jar add the dry roasted ingredients of channa dhal and red chilly mixture. and grind as fine powder without adding any water to get fine paste.
STEP : 6
Then in the same jar add the roasted vegetables ingredients into it and grind it as fine paste , at this stage add the needed salt for this chutney.
STEP : 7
While grind the mixture add the tamarind extract water by adding gradually into that and adjust water for the consistency needed as thick are thinner.
STEP : 8
Heat a pan add 1 tbsp of water and add some mustard seeds and curry leaves in to it, and pour the tempered mustard seeds into that chutney mixture.
