Carrot laddu

STEP : 1
The key ingredients to prepare carrot laddoo ,we need carrot,coconut,rava,sugar,ghee,raisins,cashewnuts,dry ginger powder,cardamom powder,peanuts,salt and food color.

Initially Wash the carrots,grate the carrots using grater in smaller size for making sweet laddoos.

Like wise grate the four big size carrots or 500 grams more enough and keep aside.

Wash the coconuts,grate the coconuts using grater or else you can use .dry coconut mixture.

Turn on the flame,place a vessel add a cup of fresh peanuts and let it roast.

When it is dry roasted ,turn off the flame then transfer it in a plate.

When the dry roasted peanuts cools down,peel the skin and add it in a blender.

Blend it for few seconds till it turns semi powder consistency then transfer in a plate.

In a same pan,add a tablespoon of ghee or clarified butter and let it melt

Add a cup of sooji or rava and let it roast for few seconds in a low flame.

When the sooji raw smell goes out,turn off the flame and transfer it in a plate.

Once again ,add a tablespoon of ghee or clarified butter and let it melt for a second.

Add a fresh grated carrot in a same pan and mix it for few seconds.

Add a fresh grated coconut along with the carrot and mix it for few seconds.

Add one cup of sugar or granulated sugar and stir it completely for few seconds.

Add a Pinch of food color for good color in a bowl,it is totally optional.

Add little bit of water and mix it completely using spoon ,don't add much water.

Add few drops of prepared food color along with the coconut mixture and mix it .

Add a pinch of salt for blended taste because there is no sweet recipe with out using salt.

Add the coarsely grounded peanut mixture along with the carrot mixture and mix it completely.

Add the roasted sooji or rava along with the carrot mixture and mix it completely.

Add crunched two cardamoms or half tablespoon of cardamom powder and mix it continuously for few seconds.

Add half tablespoon of dry ginger powder or sukku and mix it continuously for few seconds.

Let's roast the nuts,place a kadai add the remaining tablespoon of ghee and let it melt.

Add few broken cashews in a ghee and mix it,You can add crunched badam if you prefer

Add quarter cup of raisins and mix it,You can add crunched walnuts or pistachios if you prefer.

Add the roasted nuts in a boiling carrot mixture and mix it ,let it cook.

After 2 to 3 minutes ,when the mixture completely cooked turn off the flame and allow to cool.

After transferring the mixture in a plate,grease a ghee on a palm and take some amount of mixture.

Make it lemon size ball by pressing gently on center of a palm,Now our tasty carrot laddoo is ready.
