Making Easy Way To Carrot Egg Masala With Side Dish

Ingredients of Carrot egg masala

STEP : 1
Firstly wash carrot and bean, then finely chop beans and carrot and keep it a side. Then chop onion into small pieces. Take 2 3 eggs.

Heat mustard oil or any other oil in a non-stick pan. Add chopped onion and sauté it until oil get start separated from it and its colour turn into light brown.

add chopped carrot and sauté it for few second, after that add chopped beans and again sauté both carrot and beans together. Add green chilli and mix well.

Add one-fourth tablespoon turmeric powder, red chilli powder, Everest sabji masala, salt as require and pinch of sugar. Mix masala with vegetables properly.

Remove the carrot and beans preparation to another bowl from the pan. Now on same non stick pan add 2 tablespoon of oil, cumin seeds, tomato puree and sauté it for 2 minutes on medium flame.

When the masala preparation is completely done. Reduce the flame to low and one by one add the eggs. Increase the quantity of egg according to your need.

Stir continuously so that the eggs get mix with masalas. Cook it until the raw smell of egg get vanishes completely. Then add the carrot and beans preparation.

Mix the vegetables with egg and sauté it until oil get start separated from every side. After that add chat masala and mix again it properly.
STEP : 9
Add one tablespoon of fresh cream and coriander leaves, mix well. If you dont have fresh cream add milk in place of cream and sauté it for two minutes.
STEP : 10
Add ghee and turn off the flame, then transfer it to a serving bowl. Garnish with fresh coriander leaves. Serve hot with crispy paratha or tandoori naan.
