Carrot and cucumber kheer
STEP : 1
For Grating: Peel off the skin then Wash and grate the given vegetables such as two carrots and one Cucumber and keep aside.
STEP : 2
Heat a heavy bottom pan add given measure of milk and bring it to boil for few minutes by do not add any water into them,and keep aside for cool.
STEP : 3
Heat another pan then add the sago and dry roast it for few seconds,aware about to avoid the over burn to avoid the black color formation,and keep aside for cool.
STEP : 4
In that same pan add some water and bring it to boil,when the water gets boiled add the dry roasted sago into them and bring them to boil for few minutes till it gets spongy texture.

When sago gets boiled add the grated vegetable such as carrot into them and stir continue till it gets boiled and also avoid the bottom burning.

After few seconds again add the grated cucumber with them and stir continues to boil itself as soft and light texture.

When both the vegetables gets cooked,now add the given measurement of sugar with them and stir well for few seconds and bring it to boil.

When the sugar gets melts itself add 1/2 tbsp of Green elachi powder which gives good aroma and better flavor to this recipe,And remove from flame.

When the boiled milk gets cold,and also warm the boiled vegetable mixture,now pour the cold milk with them and mix well.

For Tempering: Heat a temper pan add some ghee and melt them in medium flame,then add the cashew nuts and dry grapes into them in medium flame.

Pour the tempered nuts and fruits mixture over the carrot and cucumber kheer and mix well and now serve as either hot or cold.

For cold kheer keep the cucumber and carrot kheer into the refrigerator for and hour or add some ice cubes into them and serve chill.
