Ingredients of Caramel Burfi
Caramel Burfi

STEP : 1
The key ingredients to prepare caramel burfi,we need milk,sugar,rava, shredded coconut,cashews,cardamoms,cinnamon,elaichi powder,raisins,ghee and a pinch of salt.

STEP : 2
Turn on the low flame ,add a cup of shredded dry coconut or normal coconut .

Saute the mixture finely and add a tablespoon of ghee for good taste and mix it.

When the dry coconut slightly changes its original color or golden color ,transfer it in a another bowl.

In a same pan or tawa ,add another tablespoon of ghee in a low flame.

Add one and half cup of suji or rava and saute it till it turns crisp.

When rava roasted with raw smell goes away ,turn off the flame and transfer it.

To prepare caramelising sugar,add a cup of sugar in a same pan and saute it.

Mix the sugar for two to three minutes till it turns hard and add little bit of water.

At the same time ,boil the 1/4 liter of milk in a vessel and let it boil.

After few minutes when the milk starts frothing turn off the flame and let it turns warm.

After few minutes Boiling sugar syrup turns caramelising or golden brown color and mix it.

Add the boiled milk along with the caramelised sugar and mix it completely and dissolve the lumps.

Add two nos of ciinnamon sticks to bring the liquid in a nice flavor ,it is optional.

Add crunched three nos of green cardamoms for good smell and mix it ,add a pinch of salt.

Let's roast the nuts,place a kadai add the remaining tablespoon of ghee and let it melt.

Add crunched cashews in a ghee and roast it till it turns golden brown color.

Add quarter cup of raisins and mix it,if you can add a crunched badam along with nuts.

Add another cup of sugar and mix it ,add a pinch of chotti elaichi powder.

Now add the ghee roasted nuts into the mixture and mix it well using spatula.

Add the roasted rava or suji ,side by side mix it with out formation of lumps.

Add roasted dry coconut into the creamy mixture and mix it completely in a low flame.

When the mixture turns thick after regular intervals of mixing it,turn off the flame and let it cool.

Take a long plate ,apply little bit ghee ,add the mixture and spread it evenly on all sides ,after few seconds cut in a desired shape.Our tasty caramel burfi is ready.
