This is an unique Salad Recipe which has a special ingredient Mayonise. It tastes amazing and will be loved by everyone. It's an easy salad to try out when you have guests and your loved ones. I am sure you will love it !!

Ingredients of Brinjal Salad

4.00 no Brinjal Egg Plant
4.00 no Onion
4.00 no Green Chilly
0.25 no Ginger
2.00 tbsp Coriander Leaves
6.00 tbsp May onise
0.25 no Salt
4.00 tbsp Oil

Brinjal Salad

Cut the brinjal into round slices as shown in the picture, don’t cut it very thin, it should be little thick. Soak the cut brinjal in warm salt water for 10 minutes and wash thoroughly and drain the water and keep aside to dry for 2 minutes

Now cut 3 medium onions into round slices, cut 4 green chilly into thin round slices, œ inch ginger into small pieces, few coriander leaves into small pieces and keep aside

Heat a non-stick pan, add little cooking oil and add the brinjal and shallow fry till slightly brown. Turn the brinjal and fry till the other side turns slightly brown

Once the brinjal is fried and cooked, place a tissue paper on a plate and put the fried brinjal on the plate so that the excess oil gets absorbed by the tissue paper

Now take a bowl, add 6 tablespoons of mayonise, Πteaspoon salt and all the ingredients kept aside in Step 2 ( onion, green chilly, ginger, coriander) and mix well

Now add the fried brinjal to the above mixture in Step 5 and mix well. Pour the contents to a bowl and garnish with coriander leaves and serve
