All the ingredients are taken as per measurement. Vegetables are grated as per requirement. Dhaniya and dal is powdered.

Firstly take a pan and fry sesame seeds to light brown, till rawness is removed. It acts as a good bind for the gravy.

Another important stuffing ingredient is groundnut. Place groundnut into it and fry it till rawness is removed.

After the ingredients is fried and crackled, add mint leaf into the pan. Allow it to fry, till good aroma.

Stir all the ingredients well. The mixture becomes concentrated, indicates that it is completely fried.

Now it is time to prepare the powdered stuff. Transfer the mixture into the grinder for powdering. Also place dhaniya powder.

Transfer the stuff into another bowl. Also add salt to the stuff for better results.

Make four vertical slits to the brinjal. Place the stuff into the silted brinjal as shown. Press the brinjal, so that the stuff does not spread.

Now take a pan pour oil into it. Add curry leaf and place the stuffed brinjal into the pan. Close the lid and allow it to cook, till soft.

Stir it occasionally. Add chilly powder and little water as per taste. Tasty pudina stuffed brinjal is ready to be served. It is garnished with lemon. It serves 4.
