Ingredients of Brinjal pickle
STEP : 1
First of all keep all the ingredients ready. Wash the brinjal and cut it into small cube pieces. I have used purple color brinjal. Any kind of brinjal can be used. Even after slicing wash it again and drain ff excess water.

The ingredients can also taken and keep it aside. Salt;chilly powder and vinegar quantities can be varied as per the requirement. No artificial color is used here. Green chilly has to be sliced n round shape. The oil we use is gingelly oil.
STEP : 3
Now keep a frying pan over the flame. Add gingelly oil into it. Once the oil get heated up we can add chopped garlic and green chillies into it. Saute them for few minutes in medium flame before adding brinjal.
STEP : 4
The color of garlic and chilly need not change. But after few minutes add brinjal pieces into it. Add needed salt with it. Saute for around 10 minutes so that it gets cooked. But of course w need water to cook it properly. But water is not added at this stage.
STEP : 5
Now add chilly powder ;and asafoetida powder into it.Mix it well. Saute until its raw smell go away. Then add boiled water into it and allow it to cook. Finally add vinegar as required. Now the yummy brinjal pickle is ready.
