STEP : 1
Scrape out the bottle gourd skin and chop into small cubes.and also chop the green chilies and onion into long thin slices and wash out the green peas.

Heat a cooking pan add some ghee and add some cumin seeds.black pepper seeds.and colves and cinnamon sticks and saute well for few seconds.

Add chopped green chilies and long lengthy chopped onion slices with them and saute well till it changes to golden brown color.

When onion gets fried now add some ginger garlic paste and saute well for few seconds till the raw smell completely goes out

The ginger garlic pastes are saute well now add the wash green peas and saute well.you can also use already soaked and boiled dried green peas also

Then add the powdered ingredients such as red chilly powder.turmeric powder.coriander powder and a pinch of garam masala powder.and mix well.

Then add the small cubes of bottle gourd with them and stir well till the ingredients are mixed well together itself.

Then add the well washed and well drained rice with them and fry it for few seconds till the rice gets well fried to avoid the over boil of rice.

When the rice gets fried add 4 cups of water for 2 cups of rice as 1:2 ratio and add needed salt mix well and close the lid and bring it to boil for 5 to 6 minutes.

After five minutes keep the rice pot in dhum process.is nothing but heat a flat tawa and place the cooked rice pot over them and place a vessel full of water over them and bring it boil for 10 minutes in slow fire.After 10 minutes add chopped coriander and mint leaves and add 1 tbsp of lime juice and stir well.

heat a seasoning pan add some ghee and roast some cashew nuts and pour it over the cooked rice pot.and mix well

Now the bottle gourd pulao is ready to serve hot with any type of spicy gravy or curry and also best go with curd raita.
