STEP : 1
Take the rohu fish head. Wash it and clean it very well on all sides. Add salt and turmeric so that the head can be deep fried.

Heat oil in a frying pan and add the salt and turmeric marinated fish head. Deep fry it on both sides so that the fish head is crispy. After frying drain the excess oil and set aside the fried fish head in a plate to be cooked with the gourd.

Peel the gourd, wash it and chop into fine thin slices. Put some water in the pressure cooker and boil the gourd for 5 minutes so that it softens.

Once the pressure is cooled open the lid and take out the boiled gourd. Let it cool and mash the boiled gourd to a semi consistent paste.

Make a paste from the ginger Slit the green chili Chop the fresh green coriander leaves to be added as a garnishing.

Heat oil in a kadai and add the fried fish head in it. Break it into small pieces with the spatual so that all the pieces are almost uniform sized.

Add the boiled and mashed gourd to the fried and mashed fish head above. Add salt and turmeric and mix well.

To the mixture above add the green chili and ginger and mix it very well uniformly to blend with the vegetable.

Cook for 2-3 minutes and let all the water from the gourd get drained off. Add the coriander leaves for garnishing and the dish is ready to be served.
