Boti Preparation

STEP : 1
The key ingredients to prepare botti curry,we need botti ,onions,coriander seeds,red chillies,cumin seeds,black pepper,fennel seeds,poppy seeds,tomatoes,turmeric powder,curry leaves,green chillies,tamarind,cinnamon ,lavang,oil and salt.

STEP : 2
Initially turn on the flame ,place a long vessel ,boil two liter of water to clean botti.

STEP : 3
When it turns hot ,turn off the flame and add the botti curry in hot water.

STEP : 4
Add the goat flesh along with the botti tripe then wash it once or twice completely .

STEP : 5
After washing it ,strain the water completely using slotted big bowl and keep it aside.

To prepare tamarind concentrate or syrup ,take a lemon size tamarind in a seperate bowl.

Add little bit of water along with the tamarind ,let it soak for 5 to10 minutes.

To make onion paste,take a cup of shallots onions for more taste and add in a blender.

Blend it for few seconds till it turns thick puree ,you can also cut into very fine small pieces .

To make tomato puree,take a medium size of two tomatoes ,add it in a blender by cutting into four pieces.

For tampering ,turn on the flame ,place a pan add half cup of oil and let it heat.

Add the strained botti and goat flesh along with hot oil and saute it few seconds.

Add a blended spice mix powder and stir it very well ,cook it till the raw smell goes.

Add a blended onion paste and stir it very well ,cook it till the raw smell goes.

Add a blended tomato puree and stir it very well ,cook it till the raw smell goes.

Add a tablespoon of salt or as per your taste along with masala and mix itcompletely.

Add little bit water or required amount of water and mix it ,let it cook.

Close the lid and cook it for 10 to 15 minutes completely till the oil oozes.

Add the filtered tamarind syrup along with the curry and mix it,let it cook few minutes.

For tampering ,turn on the other flame ,place a pan add half cup of oil and let it heat.

Add a tablespoon of cumin seeds or jeera ,let it splutter in very hot oil.

Add a cup of onions and fry it for few seconds till it turns golden brown.

Add fresh curry leaves and mix it lightly ,let it fry for few more seconds.

Add two nos of green chillies for more spices and let fry for few seconds in a medium flame.

Add the boiled botti curry in it then add finely chopped coriander leaves and mix it.

Spice mix botti curry is ready in a medium flame ,then transfer it in a serving bowl.
Masala Powder Preparation

STEP : 1
For roasting ,turn on the flame ,place a pan add a tablespoon of black pepper in it.

STEP : 2
Add a cup of coriander seeds along with the black pepper and dry roast it .

STEP : 3
Add few or 8 to 10 red chillies along with the spices and dry roast it .

STEP : 4
Add a tablespoon of cumin seeds along with the spices and dry roast in a low flame.

STEP : 5
Add few curry leaves along with the spices and dry roast in a low flame.

Add a tablespoon of fennel seeds along with the spices and dry roast in a low flame.

Add a tablespoon of poppy seeds along with the spices and dry roast in a low flame.

Add half cup of raw rice along with the spices and dry roast in a low flame.

Add a tablespoon of turmeric powder along with the spices and dry roast in a low flame.

When it is dry roasted,add a single cinnamon stick and lavang along with the spices.

Turn off the flame and allow to cool for few seconds then add in a blender.

Blend it for 2 to 3 minutes till it turns a nice or thin powder consistency.
