STEP : 1
Take the scraped coconut, red chili, cumin seeds, coriander seeds, fennel seeds, cardamom, black pepper and cloves as the ingredient of the Chettinad Masala.

Heat oil in a frying pan and then add all the masala to it except for the scraped coconut and cook it till it starts emitting aroma.

Now add the coconut and cook it for some time till all of them blend well and then the fried masala is ready to be grounded.

Put the fried masala in the grinder and make a fine paste of the same. Add some water if needed. The Chettinad masala is then ready.

Take the boneless mutton pieces and wash and cut them into small pieces and then they are mixed with salt and turmeric and boiled in a pressure cooker.

After boiling the button drain off the excess water and keep the tender mutton pieces in a bowl to be cooked in the masala.

Chop the onion and tomatoes, peel the garlic and slit the green chili. wash the curry leaves well and also the coriander leaves.

Heat oil in a kadai and add the red chili and curry leaves and fry them well till the curry leaves become crispy.

Now add garlic cloves to the kadai and fry them till brownish in color and starts emitting the aroma well.

Add the onion slices to the kadai and fry them well till they turn slightly pinkish and become tender. Add some salt.

Now add the tomato and the green chili and fry them very well till they become soft and the tomato melts in the oil.

Add the chettinad masala to the kadai and mix it very well, fry for 1-2 minutes till there is aroma.

Now add the pre boiled mutton pieces and the kashmiri lal mirch (red chili) for color only and mix very well and cook for 2-3 minutes. Add no water.
