Ingredients of Bombay chutney
STEP : 1
The key ingredients to prepare bombay chutney , we need potatoes , gram flour, tomatoes, onion, green chillies, coriander leaves,curry leaves,garlic cloves,cumin seeds , mustard seeds, garam masala powder, coriander powder, red chilly powder, turmeric powder , oil and salt for taste.

Take a seperate bowl , add half cup of besan flour or chick pea flour for making thin batter.
STEP : 3
Now add little bit of water in chickpea flour and mix it without any lumps .
STEP : 4
Then add one cup of water for making thin consistency and keep it aside for few seconds.

Turn on the flame , place a pressure cooker add a cup of water then add medium size potatoes , close the lid leave it for 2 to 3 whistles.

After 2 to 3 whistles when the pressure comes down completely slightly open the lid and check it.

Peel off the potatoes skin and cut into small pieces or mash the potatoes lightly and set aside.

Turn on the flame place a non stick tawa or vessel add 3 to 4 tablespoon of oil and let it heat for few seconds.

For tempering add half tablespoon of cumin seeds in a hot oil and let it splutters.

Add half tablespoon of mustard seeds and allow it to splutter in a hot oil for few seconds.

Add 8 to 10 curry leaves and allow it to splutter , if possible you can add a pinch of hing or asafoetida.

Add finely chopped 4 to 5 garlic cloves and saute it lightly, you can also add a tablespoon of finely chopped ginger.

Add two pieces of green chillies and saute it lightly , you can even red chillies instead of green chillies.

Add a cup of thin sliced onions and saute it for few seconds till the onion turns light brown color.

Add half tablespoon of turmeric powder and mix it , you can add black pepper powder for spicy taste.

Add a cup of tomatoes and saute it well till the tomatoes will get nicely blend with other ingredients.

Add a cup of boiled potato pieces into the mixture and mix it then leave it to cook for few seconds.

Add a tablespoon of red chilly powder into the mixture and leave it till the raw smell goes away.

Add a tablespoon of coriander powder or dhania into the mixtue and saute it well and let it cook .

Add a tablespoon of garam masala powder and mix it then saute it well and leave it to cook for few seconds.

Add a tablespoon of salt or according to your taste then mix it very well and mash it well using spatula or spoon.

Add half cup of fresh coriander leaves and mix it , you can even add coriander leaves while turn off the flame.

Add a chickpea batter into the mixture and mix it well , now close the lid and allow it to cook till the chick pea batter well boiled and thickened for 3 to 5 minutes.

Open the lid and mix the chutney very well , you can add a little bit of water if you prefer thin consistency, our yummy bombay chutney is ready to serve for poori.
