Bitter Gourd Curry
- 2.00 nos Bitter Gourd
- 0.25 kg Pumpkin
- 1.00 nos Potato
- 0.50 nos Brinjal
- 1.00 tbsp Mustard Paste
- 2.00 nos Chili
- 0.25 tbsp Salt
- 2.00 tbsp Oil
- 0.25 tbsp Kalonjee Seeds
Instructions
Bitter Gourd Curry
- Chop the potato, brinjal, pumpkin and bitter gourd into long cubes of almost uniform size so that they are uniformly cooked. Slit the green chili and make a paste of the mustard seeds.
- Heat oil in a kadai and add the kalonjee seeds and the bitter gourd. Fry them till the bitter gourd turns golden brown in color.
- Add the rest of the vegetables and fry them for 45 minutes. Add the salt and sugar and mix them while stirring.
- Keep on stirring the vegetable so that they get cooked and add the turmeric and mix it well and cook for 23 minutes.
- To the vegetable mixture above add the mustard paste and stir it continuously till the mustard paste is mixed thoroughly.
- Cook the above mixture for another 56 minutes till all the vegetables are softened but not completely boiled. Stir continuously while cooking.
- Add half a cup of water to the mixture and cook it under simmer by covering with a lid so that the vegetables are all boiled. Once the water is dried the curry is ready to be served.
