STEP : 1
Chorchori hasalways been a dry vegetable Bengali dishFor me Charchari has always been a dry vegetable Bengali Dish. There is various types of chochhories in Bengali household.Thus Alu Charchari is a Charchari with Potatoes, Alu-Fulkopi Charchari is a dry dish with Potatoes and Cauliflower.

Begun Charchari has Brinjal playing the central character and so on. The method of preparing is more or less the same and the only thing that varies is the vegetable and the spice used for phoron or tempering. It could be Panch Phoran, Black Mustard Seeds, Kalonji.
STEP : 3
Also one type of chorchori is more in Bengali kitchen; this is with the various of saags / leaf based vegetables such as spinach; mustared ;methi ; chaurai etc. They are very healthy for us and ofcources tasty too.Today i am going to make" Chorai saag er chorchori"

For this we take potatoes brinjal freanch beans; and chorai saag. First we wash all the vegetables exccept the saag. Cut these vegetableas zhown in this picture. Wash them again drain the water and keep them aside.Make sure all water is drainout .
STEP : 5
And now it turn to the saag .Take the sag tore the all leaves and keep them aside.Then take stems and and cut it into small pieces.Now cut the leaves also in small pieces. All shown into the pictures. Wash them properly.

Drain the exces water from the saag and stem. Take a deep kadhai heat it and pour 1.5 tbsp of mustared oil in it. Add the pachforan seeds and hing a pinch of in it lets spliterr them. add a green chilli cut into its midium.

First add potatoes fry it for few minutes. Then the brinjal ; pumpkin and freanch beans.Mix well add the saag and the stem.Mix properly fry for few mins.Add crushed ginger ; turmeric powder ; salt and sugar.Mix all the ingridiants. sim the gas and cover it .cok it for 10 mins If potatoes are cookd then your dish is ready .Pour 1tbsp of mustared oil in it. Serve it with dal and rice.
