Labra is a mouthwatering dish of West Bengal. A very mild species are used and it is made with seasonal vegetables. Bengalis love to have labra with khichuri. In this recipe vegetables are cooked with paanch phoron (five spices).

Ingredients of Bengali vegetable curry

0.25 cup radish
0.25 cup brinjal
0.25 cup potato
0.25 cup pumpkin
0.25 cup parwal
1.00 cup palak
0.25 cup carrot
0.25 cup raw banana
3.00 no green chili
1.00 no whole red chili
5.00 no bori
1.00 tbsp oil
0.50 tbsp paanchporon
0.25 tbsp salt
0.25 tbsp turmeric powder
1.00 tbsp ghee
0.25 tbsp ginger

Bengali vegetable curry

Take chopped radish, eggplant/ brinjal, potato, pumpkin, parwal, palak, carrot, raw banana, green chili, whole red chili and few bori and place it separately on a plate.

Add brinjal and pumpkin and mix it with other vegetables. Don’t skip these two vegetables because it is the main vegetables of the labra recipe.

Finally add palak with grated ginger (add only little amount of ginger) and reduce the flame and also cover the kadai. Also add salt as required, turmeric powder and little of sugar.

Now add the fried bori, ghee and green chili, and then cook it for 10 minutes more. Turn off the flame and serve it in a serving bowl. Finally garnish with green chili and bori.
