Ingredients of Bengali vegetable curry
Bengali vegetable curry
STEP : 1
Take chopped radish, eggplant/ brinjal, potato, pumpkin, parwal, palak, carrot, raw banana, green chili, whole red chili and few bori and place it separately on a plate.
STEP : 2
Fry the bori and transfer it to a plate. In place of bori you can use lentil fritters. But for lentil fritter you have to soak the lentil at least for 4 hours.

For making labra add one by one the vegetables. First add radish and potatoes and fry it for few minutes. You can increase the quantity of vegetables.
STEP : 4
Now add raw banana, carrot and parwal, sauté these vegetables for few minutes. In place of these vegetables you can add some other vegetables if you like.
STEP : 5
Add brinjal and pumpkin and mix it with other vegetables. Dont skip these two vegetables because it is the main vegetables of the labra recipe.
STEP : 6
Finally add palak with grated ginger (add only little amount of ginger) and reduce the flame and also cover the kadai. Also add salt as required, turmeric powder and little of sugar.
STEP : 7
Remove the cover after 20 minutes and stir it continuously. No need to add water as these vegetables already contains a good quantity of water.
STEP : 8
Now add the fried bori, ghee and green chili, and then cook it for 10 minutes more. Turn off the flame and serve it in a serving bowl. Finally garnish with green chili and bori.
