STEP : 1
Alur dom is a very authentic and traditional dish. Bengali es make this dish in special occasions with luchi or parathas. Alur- dom can be made in two types one is niramish with only garam masala and another is with onion and garlic paste.

STEP : 2
Here I am going to share the niramish shitkaler alur dom . Which I think you are love it. At first take baby potatoes. Make sure that the potatoes should be same sized. Wash the potatoes and put them in a cooker and boiled them.

STEP : 3
After 2 whistles turn off the gas Make sure that the potatoes should not boil too much. We need only light soft potatoes. Now drain the potatoes from he water and keep them aside to be cold. After some time peel off its skin and keep aside.

STEP : 4
Take 2 tomatoes and chopped them finely . Take 1 inch ginger and grate it . Take 1 bowl of green peas. Bhaja moshla is the main part of this dish. This masala has a wonderful smell and gives any dish an awesome taste.

To make bhaja moshla, take cinnamon , cumin , coriander seeds, cloves, cardamon roast all of them in a pan . Now add them in a blender jar and make a smooth dry powder . Now starts the dish.

STEP : 6
Take a kadhai heat it properly. Add 3 tbsp or 4 tbsp of mustard oil in it. This dish is rich and spicy so we need quit big amount of oil. After heating the oil add cumin seeds , hing and raw garam masalas.

STEP : 7
Keep the all masalas fry for few seconds and let them crackle. The oil is started tempting now , add boiled potatoes in it. And let it be fried . Fry the potatoes till it started getting brown colour.

STEP : 8
Now drain out the potatoes from the oil and keep them aside. Add 1 or 2 tbsp of oil more in the kadhai let it be heated. Add the finely chopped tomatoes , grated ginger in it . Fry them still it get softer.

STEP : 9
Add green peas in it and mix well. Add turmeric powder, coriander powder, red chili powder , salt as per your taste. Mix and fry the whole ingredient properly. Add the fried potatoes in it mix the potatoes with whole the masalas.

STEP : 10
Now add more salt if needed. add the bhaja garam masala in it mix well. Add 1 and half cup of water in it and cover it. Sim the gas. After 10 mins open the cover add 2 tbsp of ghee in it garnish the dish with coriander leaves. Serve it hot with parathas or luchis.
