chicken razela is a bengali style chicken curry recipe which is better to go with all types of pulaos and briyani recipes.here i should submitted a simplest version of chicken razella ,where i have added some cashew and whole pepper corn seeds which gave an amazing taste to this recipe.
Bengali Chicken – A Perfect Taste And Healthy Bengali Chicken Recipe
- 1.50 kg Chicken Meat
- 2.00 tbsp Onion Paste
- 1.00 tbsp Ginger Garlic Paste
- 0.5 cup Yogurt
- 10.00 nos Black Pepper Corns
- 1.00 tbsp Bay Leaf
- 1.00 tbsp Cinnamon Stick
- 3.00 tbsp Cloves
- 2.00 tbsp Cardamon Pods
- 0.25 tbsp Fennel Seeds
- 0.75 tbsp Salt
- 0.25 cup Cashew Nuts
- 2.00 tbsp Oil Or Ghee
- 0.5 tbsp Coriander Leaves
- Take 250 grams if fresh Chicken meat wash then we’ll in running water,strain all the excess water and add two tbsp of onion paste and one tbsp ginger garlic paste and add enough salt for them.
- Then add half a cup of fresh yogurt and mix them well till all the ingredients are well spread.
- When the added ingredients are well mixed,now Jeep them for marination process in fridge for at least one hour,you may marinate the chicken for overnight for better taste.
- Add a quarter cup of cashew nuts to a mixer jar,then add eight to ten whole black peppercorn into them.
- I have used to soak the cashew nuts in warm water for few minutes to get fine paste,now blend well to make a thick cashew paste,keep them aside.
- Heat a pan add required quantity of oil or ghee then add all the whole spices such as fennel seeds,black pepper,bay leaf,cinnamon stick,cloves,and cardamom pods and stir for few seconds in low fire.
- Now the marinated chicken cones to a room temperature,now add those marinated chicken along with the marinated ingredients.
- Roast for few seconds to till added marinated chicken gets little roast and flipped all sides and saute well.
- Now cover the lid and put the fire into medium flame,niw bring it boil for twenty minutes without any disturbing it.
- After twenty minutes remove the lid,niw you can visibly seen that the excess water comes out from the chicken and almost the chicken has to be well cooked now.
- When the excess water comes to dry,now add the well grounded cashew and pepper paste into it and stir well.
- Now the chicken razella is almost done as thick and white curry,finally garnish some chopped coriander and serve hot with hot and tasty pulao or briyani recipes.
