This is a chicken thali combo which comprises of rice a dal and 3 types of bhajis, along with a dry chicken duck bungalow cooked in the Bengali style. Along with it there is a chutney made from tomato which is the sweet dish also at the end.

Dal Preparation

  • 0.25 cup Moong dal
  • 0.25 tbsp Cumin seeds
  • 2.00 nos Bay leaf
  • 1.00 tbsp Coconut paste
  • 2.00 nos Red chili
  • 2.00 nos Tomato
  • 1.00 tbsp Ginger paste
  • 2.00 nos Green chili
  • 1.00 tbsp Turmeric powder
  • 1.00 tbsp Salt
  • 1.00 tbsp Sugar
  • 0.25 cup Green peas
  • 1.00 tbsp Coriander leaves
  • 1.00 tbsp Garam masala

Vegetable Fry Preparation

  • 1.00 nos Potato
  • 1.00 nos Pointed Gourd
  • 0.50 nos Radish
  • 1.00 nos Ribbed Gourd
  • 0.25 nos Sweet potato
  • 0.25 nos Brinjal
  • 1.00 nos Long beans
  • 0.25 nos Carrot
  • 0.25 nos Green pumpkin
  • 0.25 nos Papaya

  • 0.25 tbsp Kalongi seeds
  • 4.00 tbsp Oil

Chicken Fry Preparation

  • 0.25 kg Chicken
  • 2.00 tbsp Salt
  • 0.25 tbsp Turmeric powder
  • 1.00 cup Yogurt
  • 2.00 nos Onion
  • 10.00 nos Garlic
  • 2.00 nos Tomato
  • 2.00 nos Green chili
  • 6.00 tbsp Oil
  • 3.00 nos Potato
  • 1.00 tbsp Garam masala

Instructions
 

Dal Preparation

  • Take the moong dal, coconut paste, ginger paste, green peas, chopped tomato and the slit green chili to make the dal.

  • Dry roast the dal and then boil it in a pressure cooker so that it melts. Set aside the boiled dal in a bowl.

  • Add cumin seeds, bay leaf and a red chili to the hot oil n a kadai and let the cumin turn black.

  • Add the tomato and ginger paste along with the coconut paste. Fry them well till the ingredients are blended well

  • Add the boiled dal, turmeric and salt and sugar and also the green peas. Cook for 5 minutes till the dal thickens.

  • Once the dal is ready add the coriander leaves and garam masala and ghee before serving as a part of the combo.

Vegetable Fry Preparation

  • Chop the potato into very thin slices and deep fry them in oil and drain off the excess oil to keep it in a bowl. This forms the potato fry (Jhoori Alu Bhaja) of the combo.

  • Take all the mixed vegetables and cut them into an uniform size so that all are cooked uniformly and wash and clean them

  • Heat oil in a kadai and add the kalonji seeds and the puffed pulses. Fry till the puffed pulses turn brown.

  • Add all the vegetables to the hot oil, add a green chili and salt and sugar and mix it well and cook the vegetables for 4-5 minutes.

  • Add 2 cups of water to the vegetables and cook them with the lid covered in simmer till all the vegetables are boiled.

  • Once all the vegetables are boiled add some ghee and after the gravy becomes consistent pour the vegetables in a bowl to be added as a a part of the combo.

  • Marinate the chicken after washing it very well for 4 hours. Add salt, turmeric and yogurt for marination and refrigerate.

  • Chop the onions, peel the garlic, slit the green chili and chop the tomatoes to make all the ingredients ready for cooking

  • Heat oil in a kadai, add the potatoes, add the onion, garlic, tomato and green chili and fry all the ingredients well

  • Add the marinated chicken to the masala mixture above and cook it very well so that all the ingredients are mixed well. Add a pinch of salt.

  • Pour all the contents in a pressure cooker and cook it well for 10 minutes. After the pressure is cooled open the lid and add garam masala powder and some ghee fried onion slices and cook in a kadai for a minute or two to remove any excess water. The chicken is now ready to be served as a part of the combo in a bowl.
