Ingredients of Beetroot rice
Beetroot rice

STEP : 1
Pick and rinse one cup of basmati or bullet brand rice,and soak them for ten to fifteen and then drain the water and keep aside,

Take two medium sized Onion and Slice them as thin and long slices,then slit two green chillies and pick some mint leaves,

Then take two medium sized beetroot scrape out the skin,rinse and fine chopped them as small cubes,

Heat a pressure cooker pan add one tbsp of oil and one tbsp of ghee and brings it to hot,you can also use any one as two tbsp quantity,

Then now add all the whole garam spices such as Cloves,cinnamon stick,star anise and some fennel seeds into them and roast for few seconds,

Then now add thin slices onions into them and roast well for few minutes till it roast well,

Then now add two tbsp if freshly grounded ginger garlic paste and some slit green chilies into them and saute well for few seconds,

Then now add some well picked ad cleaned mint leaves and coriander leaves into them and stir for few seconds,

Then now add those well scrapd out sliced beetroot slices into them and stir well,

Then now add all the spice powders such as red chilly powder,garam masla powder and little turmeric powder into them and stir well for few seconds,

Then now add those already soaked and drained rice into them and stir well,m ake sure the water should be drained completely before add it to them,

Then now stir well for few minutes to roast the rice as well,whuch helps to keeps the rice remains long grains,

Then now add enough water into then,here I have used to add water as 1:1,1/2 ratio,thus for one cup rice I have added one and half cup water into them,

Then now add enough salt for them and stir well,adjust the salt and spice at this stage is enough,

Then now close the pressure cooker lid and put weight over them and brings it to boil for three whistles,

After three whistles the pressure downs itself and remove the lid carefully,now the rice dones almost,

Then now add one tbsp of freshly squeezed line juice into them and stir well to mix them Well,

Then now sprinkle some fine chopped coriander leaves over them and transfer to a serving plate,

Then now serve the tasty and spicy beetroot pulao with chutney or raita recipes.
