Grate beetroot to small pieces. Transfer into a pan with normal sauting . Lightly roast onions, tomatoes, garlic and ginger. Make a paste. Also add kaskas. Add this masala into the pan and allow to cook for twenty minutes. Garnish.

Then take a pan and pour oil to saute beetroot. Add onions and beetroot grated and allow it to cook , till they are turn brownish.

Floating oil on the top of the pan, indicates it is well cooked. Transfer it into a separate bowl and garnish it with coconut and chopped curry leaves. Serve it with rice. It serves eight.
