Have you ever heard of idlis made from barley? I had never heard of it. I got this recipe from a friend of mine. I tried it and they came out absolutely fantastic. Smooth and soft, these idlis are a healthier option.

3.00 cup Barley
1.00 cup Udaddal

Soak barley and udad dal separately overnight. next morning, grind them. Mix both and leave to ferment. Proper fermentation makes them soft.
