Ingredients of Baingan bharta
STEP : 1
Wash the brinjal and clean it and then place it on a gas flame directly by making a vertical slit so that the brinjal is roasted.

After one side is roasted for 2-3 minutes then turn it in the other direction and repeat the same process of roasting for 2-3 minutes in medium flame. The skin turns blackish brown in nature.

Chop the onions. Chop the tomatoes. Make small pieces from the green chili. Chop the coriander leaves and wash them and keep all the ingredients ready.

Take out the roasted brinjal carefully from the gas flame and put it on a plate and let it cool for sometime before it can be peeled.

Peel the skin of the roasted brinjal after cooling and then mash with hands to form a smooth and uniform mixture.

Heat oil in a kadai and add the onion slices and the green chili and deep fry them till the onion softens and turns slightly brownish in nature.

Add the chopped tomatoes, salt and turmeric and fry the tomatoes well till they are softened and almost melts. Mix very well and stir.

To the mixture above in step 7 add the mashed brinjal or egg plant and mix it very well with the masala and stir continuously.

After cooking for 2-3 minutes, the dish is almost ready. Add the chopped coriander leaves for the aroma and cook for another 1-2 minute.
