This is a very tasty dish prepared from egg plant or brinjal. Here the brinjal is first dry roasted and then mashed after removing the skin.. The spicy masala is prepared and mixed with the brinjal and the vegetable is served after garnishing with coriander leaves. It can be served with rice or chapati.

Ingredients of Baingan bharta

1.00 no Egg Plant
1.00 no Onion
1.00 no Tomato
2.00 no Chili
0.25 cup Coriander Leaves
0.25 tbsp Salt
0.25 tbsp Turmeric
3.00 tbsp Oil

Wash the brinjal and clean it and then place it on a gas flame directly by making a vertical slit so that the brinjal is roasted.

Egg plant is one of my favourite vegetable. I love this bharta. This recipe is so mouthwatering and delicious. Serve it with roti or parantha and a bowl of bundi raita and salad. This is my favourite dish. My mom cooks it so good. We add some peas to it as well and lots of tomatoes. Tomato enhance the taste of it and also makes it look so flavourful and delicious.
