Ingredients of Bagara baingan
STEP : 1
The key ingredients to prepare peanut bagara baingan ,we need brinjal,peanuts,onions,tomatoes,red chilli powder,coriander powder,turmeric powder,black pepper powder,mustard seeds,fenugreek seeds,white sesame seeds,tamarind,garlic cloves ,oil and salt.

Initially turn on the flame,place a pan ,add a cup of raw peanuts and roast it.

In a vessel,take a lemon size tamarind ,wash it or else you can use tamarind concentrate.

Soak the tamarind in hot water or normal water for atleast 5 to 10 minutes.

After dry roasting the peanuts ,peel the peanut skin completely ,again add in a pan.

Add half cup of white sesame seeds and saute it,you can even add black sesame seeds.

Add a tablespoon cumin seeds along with ingredients and let splutter for few seconds in low flame.

Turn off the flame ,when it cools completely ,add the ingredients in a blender jar .

Blend it for few seconds till it make smooth ground paste,add coconut powder if you prefer.

Wash the brinjal ,cut the brinjal into four parts but don't cut at the end or stem.

For tampering ,turn on the flame ,place a pan add a required oil and let it heat.

Add a tablespoon of mustard seeds in hot oil and let it splatter for fee seconds

Add half cup of fresh curry leaves and let it splatter for few seconds and turns crisp.

Add half cup of finely chopped garlic cloves and saute it for one to two minutes.

Add the brinjal along with the ingredients and saute it for few minutes till it half cook.

Add a cup of chopped onions and saute it well till it turns transparent color.

Add two nos of chopped tomatoes and saute it for few minutes ,till it turns soft .

Add little bit of fenugreek for good taste ,mix it well and let them cook.

Add half tablespoon of turmeric powder along with ingredients ,let them cook for few seconds

Add a tablespoon of black pepper powder and mix it,you can also add crunched black pepper.

Add a tablespoon of salt for taste and mix it,Use crystal salt for taste if possible.

Add a tablespoon of red chilli powder and mix it well,let them cook for few seconds.

Add two tablespoon of coriander powder or dhania and mix it ,let them cook for few seconds.

Add a cup of water ,to avoid burning on bottom part and mix it completely

Add two cups of squeezed tamarind juice and mix it well,let them cook for few seconds.

Cook the curry mixture for few seconds ,till the raw tamarind juice smell goes away

Add the blended paste of ground peanut mixture and mix it thoroughly and leave it to boil.

When the oil oozes on top surface ,turn off the flame ,transfer the curry in a seperate bowl and serve it,Our yummy peanut bagara baingan brinjal curry is ready.
